Burrata is a fresh Italian cow milk cheese (occasionally buffalo milk) made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains Stracciatella and cream, giving it an unusual, soft texture. It is typical of Puglia, a region in the south of Italy. The delicate creaminess balanced by mild acidity makes it delicious served as a salad with fresh tomatoes, prosciutto Crudo (ham) and good quality extra virgin olive oil. Or for simplicity at its finest, try spread onto warm pieces of bread accompanied by a full-bodied red wine. Burrata is also easy to cook with lending itself to antipasto as well as pasta dishes as well as with meat, fish, and vegetables.
